I am so incredibly proud of the dinner I had tonight. I'm starting to get extremely sick of my high carb diet of pastas, rice, cereal, etc. just because it's the cheapest option, so I decided to spend the extra cash to start eating more chicken and vegetables. Tonight I had a chicken breast stuffed with goat cheese, onion, rosemary, and garlic and lemon roasted asparagus. It was even more delicious than I had imagined and it was super easy! I'm not usually one to make up my own recipes too, so I'm actually very proud of myself! Speaking of food, I am feeling EXTREMELY nostalgic for fall foods and just fall in general. I really am missing seeing all the leaves turn colors and carving pumpkins and I have a humongous craving for pumpkin bread. Even foods that I don't really like such as apple pie I find myself missing and wishing I could have a slice of. At least I'll have the full holiday season to go all out with making christmas cookies and doing holiday things! (Watch out parents, our house is going to scream Christmas ALL. MONTH. LONG.)
Yummmmmm.....
My beautiful dinner!
As for the rest of my day, classes were...okay. I narrowly avoided a confrontation with jerkface in my genetics class by quickly moving to another row when I saw him about to sit down. What was fabulous about that class today, too, was we filled in evaluations of our two professors in that class so I got to write exactly what I thought about my first professor. I love evaluations. I will always put in more time than everyone else and I will never get more excited about them when I really have something to say. Beautiful invention.
